2 brinjals cut into halves
3-4 tomatoes chopped
1 onion chopped
salt and pepper to taste
1/2tsp paprika
1tsp mixed herbs
10-15 Flat leaf Parsley
1/2 cup grated mozarella cheese

Add oil ,salt and pepper on the brinjal.
,Bake the brinjals in the oven at 200 degrees for 10-12 minutes till soft
Heat oil in a pan, salute garlic for half a minute.
Then add onions and saute till translucent .
Add tomatoes ,salt,pepper,paprika and mixed herbs cook till soft.
Take out the brinjals and scoop the inside.
Fill in with the prepared filling.
top with grated cheese.
Bake in the oven at 200 degrees for 5 minutes.
serve hot
